"Reunion dinners (a feast held on the night before the first day of the Lunar New Year) are spent with family near and far, and bok choy is common, as the leafy green represents long life. Greens also symbolise growth, good fortune and prosperity. Bok choy is a spectacular crunchy backdrop to the garlic, ginger and chilli aromatics in this dish, finished with a splash of fish sauce for extra oomph. Vegetarians can use 1 tbs soy sauce mixed with 1 tbs sesame oil instead." – Lara Lee

Ingredients (9)

  • 2 tbs coconut oil or sunflower oil
  • 1 large garlic clove, thinly sliced
  • 2cm piece fresh ginger (10g), thinly sliced
  • 2cm piece fresh ginger (10g), thinly sliced
  • 1 eschalot, thinly sliced
  • 1-2 long red chillies, thinly sliced
  • 400g bok choy, halved lengthways
  • 2 tsp fish sauce
  • White pepper, to taste

Method

  • 1.
    Heat oil in a large frypan or wok over medium-high heat. Stir-fry garlic, ginger, eschalot and chilli for 4 minutes, or until softened and aromatic. Add the bok choy, cut-sides down first, with a splash of water and the fish sauce, and cook for 1-2 minutes. Season with salt flakes and white pepper, then stir-fry for 2 minutes, making sure leaves retain their crunch.
