"We all love a good roast spud: warm, fluffy, and relentlessly satisfying. You’ll need the embers from your campfire to be quite hot for this one, so start ahead," says Hot Potato founder Shannon Harley.

Ingredients (4)

  • 4 medium sweet potatoes
  • 1 Family serving of Hot Potato Half & Half bolognese or store-bought bolognese sauce
  • Sour cream or crumbled feta, to serve
  • For the grown-ups: chilli flakes, chilli salt, a glass of red wine

Don't forget you can add these ingredients to your Woolworths shopping list.

Method

  • 1.
Wrap each sweet potato completely in foil and carefully place into the embers of your campfire fire for about 30 minutes, adjusting them every so often to ensure they are cooked evenly.
  • 2.
Meanwhile, reheat the Half and Half Bolognese over a low heat in a pan on the grill with a splash of water.
  • 3.
Once the potatoes are cooked through, carefully remove from the fire and unwrap the foil. Make two incisions into the potato, vertically and horizontally, and top with the bolognese and sour cream or cheese.
