Boozy Brillat-Savarin
A creamy cheese dish, perfect for your next platter.
Ingredients (7)
- 1/4 cup (40g) sultanas
- 1/4 cup (40g) raisins
- 2 dried peaches
- 2 dried apricots
- 1/2 cup (125ml) dark spiced rum
- 1 x 200g Brillat-Savarin cheese (we used Will Studd), in its box
- 1 baguette

1.Combine dried fruit and spiced rum in a bowl. Cover with plastic wrap and set aside at room temperature overnight.

2.Preheat oven to 200°C. Drain the fruit, reserving some rum. Wrap the bottom of the box very tightly in foil and top the cheese with the soaked fruit and a splash of rum. Place on a baking tray and bake for 15 minutes or until edges are soft and warm but centre is still firm. Transfer to a serving plate and serve with baguette.
