Braised green olives with roasted almonds

Serve this delicious side dish with fish, chicken or at your next cocktail party.

Ingredients (7)

  • 450g (about 3 cups) green olives
  • 100ml verjuice
  • 2 strips lemon peel, white pith removed
  • 2 sprigs fresh thyme
  • 3 bay leaves
  • 125ml (1/2 cup) extra virgin olive oil
  • 120g blanched almonds, dry-roasted in the oven until golden

Method

  • 1.
    Preheat oven to 150 degree. Place all the ingredients except the olive oil and almonds into a small baking dish with 100ml water. Spread a piece of baking paper directly over the olives and cover the dish tightly with aluminium foil.
  • 2.
    Braise in oven for 1 hour. Set aside in pan to cool slightly. Drain, discard liquid and toss with oil and almonds. Serve warm.
