Braised green olives with roasted almonds

- 450g (about 3 cups) green olives
- 100ml verjuice
- 2 strips lemon peel, white pith removed
- 2 sprigs fresh thyme
- 3 bay leaves
- 125ml (1/2 cup) extra virgin olive oil
- 120g blanched almonds, dry-roasted in the oven until golden
Method

1.Preheat oven to 150 degree. Place all the ingredients except the olive oil and almonds into a small baking dish with 100ml water. Spread a piece of baking paper directly over the olives and cover the dish tightly with aluminium foil.

2.Braise in oven for 1 hour. Set aside in pan to cool slightly. Drain, discard liquid and toss with oil and almonds. Serve warm.
