Brassica, apple and mint salad
A green salad for every occasion, recipe by Morgan McGlone.

Ingredients (8)

  • 3 bunches broccolini
  • 1/2 cup (125ml) grapeseed oil
  • 2 garlic cloves, finely grated
  • 2 tbs tahini
  • Juice of 2 lemons
  • 1/3 cup (80ml) rice milk or almond milk
  • 1 bunch mint leaves, thinly sliced
  • 3 Granny Smith apples, thinly sliced into rounds

Method

  • 1.
    Preheat a chargrill pan or barbecue to medium-high heat.
  • 2.
    Place broccolini and 2 tsp oil in a bowl. Season, and toss to coat. Grill broccolini, turning halfway, for 4-5 minutes until charred and tender.
  • 3.
    Meanwhile place the garlic, tahini, lemon juice, rice milk and the remaining 115ml oil in a bowl and whisk until combined. Season.
  • 4.
    Arrange broccolini, mint and apples on a platter. Drizzle with dressing to serve.
