Bread and butter bush pickles

This delicious vegetable pickle will spice up any meal from the humble sandwich to a roast dinner.
Ingredients (6)
- 1kg zucchinis, cut into 1cm pieces
- 2 red onions, sliced
- 1 red capsicum, sliced
- 2 tablespoons Australian Bush Spices orange bush curry or yellow mustard seeds
- 1 cup (220g) white sugar
- 1 cup (250ml) white vinegar

1.Mix vegetables in large non-metallic bowl with 2 tablespoons salt. Cover and stand for at least 3 hours or overnight.

2.Rinse salt from vegetables, then place in a large pan with remaining ingredients. Bring to the boil, stirring to dissolve sugar. Reduce heat to low and cook for 5 minutes or until vegetables soften. Spoon mixture into hot sterilised jars and seal.
