Homemade pizzas
Valli Little's bread pizzas are super-simple, and can be tweaked a thousand different ways. All you need to do is choose your favourite toppings!

Ingredients (10)

  • 4 small ciabattas or ficelle
  • Olive oil, to brush, plus extra to drizzle
  • 2 garlic cloves, crushed
  • 300g jar bought puttanesca or arrabbiata pasta sauce
  • 1/2 cup black olives, pitted
  • 2 tablespoons baby capers
  • 1 red capsicum, seeded, roasted, sliced
  • 8 anchovy fillets, optional
  • 125g grated mozzarella cheese
  • Chopped basil, to garnish

Method

  • 1.
    Preheat the oven to 200°C.
  • 2.
    Cut the bread in half through the middle, then half again lengthways so you have 4 pieces. Brush the outer crust with olive oil. Stir the garlic into the puttanesca sauce.
  • 3.
    Place bread halves on a baking sheet, cut-side up, and spread with the sauce. Sprinkle with the olives and capers, top with capsicum and season with pepper. Lay the anchovy fillets across the top, sprinkle with the mozzarella and bake for 15 minutes until crisp and golden. Drizzle with extra olive oil and garnish with basil. Serve with a green salad.
