Breakfast tarts
Mix up your usual summer breakfast with Valli Little's scrumptious and filling breakfast tarts. You can access this recipe along with other recipes by Valli Little in delicious. Feel Good Food (ABC, $39.99) available in bookshops nationally.
Ingredients (6)
- 2 3/4 cups (350g) toasted muesli
- 180g unsalted butter, melted
- Figs, blood plums, white peaches and blueberries, to serve
- 1 cup (280g) low-fat thick Greek-style yoghurt
- 1/4 cup (90g) honey
- Edible flowers (optional), to serve

1.Grease four 10cm loose-bottomed tart pans. Combine the muesli and butter in a bowl, then press into the base and sides of the prepared pans. Place in the freezer overnight to set.

2.When ready to serve, stand the tart cases at room temperature for 30 minutes, then carefully remove from the pans.

3.Meanwhile, slice the figs into quarters, slice the plums and cut the peaches into wedges, discarding the stones. Divide the yoghurt among the tart cases and top each with fruit. Drizzle with honey and sprinkle with edible flowers, if using, to serve.
