These tasty bruschetta make a perfect light meal, starter or party food.
Ingredients (6)
- 2 red capsicums, roasted, peeled, finely diced
- 1/2 tablespoon chopped rosemary leaves, plus extra to garnish
- 1 tablespoon olive oil, plus extra to drizzle
- 4 slices ciabatta bread
- 1 garlic clove, halved
- 125g goat's cheese
Method

1.Place the capsicum in a large bowl and add the rosemary and olive oil. Season with salt and pepper and toss to combine. Set aside.

2.Place the ciabatta in the toaster and toast until golden. Rub ciabatta with the garlic and drizzle with a little extra olive oil.

3.Spread the goat's cheese over the ciabatta and top with capsicum mixture. Serve immediately.
