Ingredients (7)

  • 1/3 cup (80ml) olive oil
  • 4 slices pancetta, chopped
  • 1 tablespoon finely chopped rosemary
  • 30g unsalted butter
  • 500g frozen brussels sprouts
  • 2 teaspoons chilli flakes
  • 4 tablespoons (1/3 cup) toasted pine nuts

Method

  • 1.
    Heat the olive oil in a large frypan over medium-high heat and cook the pancetta and rosemary until crisp.
  • 2.
    Add the butter and 100ml water and, when the butter melts, add the brussels sprouts and chilli and cook for 5 minutes on high heat. Drain, sprinkle with salt and toss with pine nuts.
