Cashew,coconut, salted caramel fudge
Healthy, decadent and filled with superfood goodness, this is not your ordinary caramel fudge. This recipe originally appeared in Cooking with Tenina: More great recipes for the Thermomix, by Tenina Holder.
Ingredients (7)
- 200g cashews, roasted
- 100g shredded coconut
- 60g coconut oil
- 50g coconut sugar
- 20g maca powder (optional)
- 1-2 tsp vanilla bean paste
- generous pinch of pink salt flakes, plus some to finish
Method

1.Place all ingredients into the Thermomix bowl and blend 3-4 minutes/37°C/speed 6, stopping to scrape down the sides of bowl as needed. Mixture should become quite liquefied.

2.Line a small loaf tin with baking paper, then pour in mixture and sprinkle with additional salt flakes.

3.Freeze or refrigerate until set. Cut into squares and serve. Keep refrigerated.
