Char siu BLATS
"I'm a sucker for a good breakfast sandwich, so I wanted to create an option with a slight Asian twist. The char siu bacon reminds me of Sunday-morning yum cha" - Louis Tikaram.
Ingredients (12)
- 18 rashers good-quality bacon
- 1 quantity char siu glaze (see below)
- 1/3 cup (100g) mayonnaise (we used Kewpie brand)
- 6 soft white or brioche rolls, halved, toasted
- 6 butter lettuce leaves
- 2 ripe heirloom tomatoes, thickly sliced
- 1 avocado, sliced
Char siu glaze
- 1/4 cup (60ml) hoisin sauce
- 1 1/2 tbs tomato ketchup
- 2 tsp soy sauce
- 2 tsp kecap manis (Indonesian sweet soy sauce)
- 1/4 cup (60ml) sriracha
Don't forget you can add these ingredients to your Woolworths shopping list.

1.Combine all char siu ingredients in a bowl.

2.Preheat the oven to 200°C and line a baking tray with baking paper. Arrange bacon rashers in a single layer over prepared tray and brush with half the glaze. Bake for 15 minutes or until lightly caramelised. Remove from oven and brush with remaining glaze.

3.Spread mayonnaise over bun bases, then layer with lettuce, tomato and avocado. Arrange glazed bacon over the top. Top with toasted bun spread with mayonnaise and serve immediately.
