"I'm a sucker for a good breakfast sandwich, so I wanted to create an option with a slight Asian twist. The char siu bacon reminds me of Sunday-morning yum cha" - Louis Tikaram.

Ingredients (12)

  • 18 rashers good-quality bacon
  • 1 quantity char siu glaze (see below)
  • 1/3 cup (100g) mayonnaise (we used Kewpie brand)
  • 6 soft white or brioche rolls, halved, toasted
  • 6 butter lettuce leaves
  • 2 ripe heirloom tomatoes, thickly sliced
  • 1 avocado, sliced

Char siu glaze

  • 1/4 cup (60ml) hoisin sauce
  • 1 1/2 tbs tomato ketchup
  • 2 tsp soy sauce
  • 2 tsp kecap manis (Indonesian sweet soy sauce)
  • 1/4 cup (60ml) sriracha

Don't forget you can add these ingredients to your Woolworths shopping list.

Method

  • 1.
    Combine all char siu ingredients in a bowl.
  • 2.
    Preheat the oven to 200°C and line a baking tray with baking paper. Arrange bacon rashers in a single layer over prepared tray and brush with half the glaze. Bake for 15 minutes or until lightly caramelised. Remove from oven and brush with remaining glaze.
  • 3.
    Spread mayonnaise over bun bases, then layer with lettuce, tomato and avocado. Arrange glazed bacon over the top. Top with toasted bun spread with mayonnaise and serve immediately.
