Feel like a traditional Vietnamese meal without slaving over the stove all day? This cheat's beef pho is tasty and super easy to make.

Ingredients (17)

  • 1 tbs olive oil
  • 400g beef fillet
  • 150g dried flat rice noodles
  • Sliced small red chilli, to serve
  • Sliced spring onion, to serve
  • Coriander, to serve
  • Lime wedges and bean sprouts, to serve
  • Bean sprouts, to serve

Beef pho

  • 2L (8 cups) beef stock or beef bone broth
  • 2 tsp brown sugar
  • 6cm piece (30g) ginger, sliced
  • 3 garlic cloves, bruised
  • 4 whole cloves
  • 2 star anise
  • 1 cinnamon quill
  • 2 tsp whole black peppercorns
  • 2 tbs fish sauce

Method

  • 1.
    For the broth, place all ingredients and 2 cups (500ml) water in a saucepan over medium heat. Simmer for 20 minutes or until slightly reduced. Season, then strain, discarding solids. Keep warm.

    Heat oil in a frypan over high heat. Cook the beef, turning, for 8 minutes or until browned on all sides but still rare in the centre. Cool slightly, then very thinly slice.
  • 3.
    Cook noodles in a large pan of boiling water according to packet instructions.
  • 4.
    Drain and divide among bowls. Pour over broth and submerge beef (this will cook it further). Serve with chilli, spring onion, coriander, lime and sprouts.
