Cheat's beef pho
Feel like a traditional Vietnamese meal without slaving over the stove all day? This cheat's beef pho is tasty and super easy to make.
Ingredients (17)
- 1 tbs olive oil
- 400g beef fillet
- 150g dried flat rice noodles
- Sliced small red chilli, to serve
- Sliced spring onion, to serve
- Coriander, to serve
- Lime wedges and bean sprouts, to serve
- Bean sprouts, to serve
Beef pho
- 2L (8 cups) beef stock or beef bone broth
- 2 tsp brown sugar
- 6cm piece (30g) ginger, sliced
- 3 garlic cloves, bruised
- 4 whole cloves
- 2 star anise
- 1 cinnamon quill
- 2 tsp whole black peppercorns
- 2 tbs fish sauce

1.For the broth, place all ingredients and 2 cups (500ml) water in a saucepan over medium heat. Simmer for 20 minutes or until slightly reduced. Season, then strain, discarding solids. Keep warm.

2.Heat oil in a frypan over high heat. Cook the beef, turning, for 8 minutes or until browned on all sides but still rare in the centre. Cool slightly, then very thinly slice.

3.Cook noodles in a large pan of boiling water according to packet instructions.

4.Drain and divide among bowls. Pour over broth and submerge beef (this will cook it further). Serve with chilli, spring onion, coriander, lime and sprouts.
