Cheat's dan dan noodles

Warren Mendes shares a cheat's version of classic dan dan noodles – made with instant noodles!
Ingredients (9)
- 3/4 tsp Sichuan peppercorns, toasted
- 2 tbs peanut oil
- 250g pork mince
- 2 garlic cloves, crushed
- 2 tbs kecap manis
- 1 tbs crispy chilli oil, plus extra to serve
- 1/4 cup smooth peanut butter
- 2 x 85g pkts spicy mee goreng instant noodles
- Chopped chives, to serve

1.Finely crush the Sichuan peppercorns using a mortar and pestle.

2.Heat oil in a wok or frypan over high heat. Add the mince and stir-fry, breaking up mince, for 4-5 minutes or until well browned. Add garlic and sichuan peppercorn and stir-fry for 1 minute. Add the kecap manis and chilli oil, and stir-fry for a further minute or until sticky and well caramelised. Remove from the heat.

3.Cook noodles following packet instructions, reserving flavouring sachets. Drain noodles, reserving 1/2 cup cooking water.

4.Combine the peanut butter, reserved noodle sauces and reserved cooking water, stirring until smooth. Divide evenly between 2 serving bowls. Top with noodles, then with the mince mixture.

5.Scatter with chives, extra chilli oil and reserved fried onions (discard remaining seasoning mix). Toss together just before serving.
