Cheat’s dumplings

These fun little dumplings will be on repeat once you’ve tried them. You can use your favourite mince and add as many chopped or grated vegies as you like. Ours were quite spread out in the pan, but you can make a bigger batch and arrange them closer; they’ll be just as delicious.

Ingredients (14)

  • 400g pork mince
  • 1 cup (80g) finely chopped cabbage
  • 1/2 onion, finely chopped
  • 3 garlic cloves, finely grated
  • 1 tsp finely grated ginger
  • 1 tbs cornflour
  • 1 tbs soy sauce
  • 1 tsp sesame oil, plus extra, to drizzle
  • 1/2 tsp white pepper
  • 1 tbs vegetable oil
  • 16 round dumpling wrappers
  • 1/2 cup (125ml) chicken stock
  • 2 long green shallots, thinly sliced
  • Toasted white and black sesame seeds, Korean chilli flakes and crispy fried shallots, to sprinkle

Method

  • 1.
    Place the mince, cabbage, onion, garlic, ginger, cornflour, soy sauce, sesame oil, white pepper and 1/2 tsp fine salt in a large bowl and mix by hand until thoroughly combined.

    Heat the vegetable oil in a large frypan that has a lid (or use 2 smaller frypans with lids) over medium high heat. Shape heaped 1 tbs measures of pork mixture into 16 rough balls and place in the pan, leaving a little space between each. Cover each portion with a wrapper, pressing edges around the filling. Add stock and cover pan with lid. Reduce heat to medium-low and cook for 15 minutes, or until pork filling is cooked and wrappers soften. Remove lid and cook over medium heat for another 3-5 minutes, until stock evaporates and base of dumplings are well browned (check a few and reduce heat if over-browning).

    Drizzle with extra sesame oil. Serve from the pan, sprinkled with shallot, sesame seeds, chilli and crispy shallots.

Recipe Notes

Leftovers will last in an airtight container in the fridge for up to 5 days. They’re great packed with steamed rice for a lunch box.
