Method

  • 1.
Cook pasta in a large saucepan of boiling salted water for 10 minutes, or until al dente. Reserve 1/2 cup (125ml) cooking water. Drain pasta and set aside.
  • 2.
Heat oil in a large heavy-based (ovenproof) frypan over high heat. Add mince and cook, breaking up lumps with a wooden spoon, for 5-6 minutes or until browned. Add onion, garlic, rosemary and chilli, and cook for 4-5 minutes or until softened. Add the flour and tomato paste, and cook for 1 minute. Add passata, milk and mascarpone, stirring well to combine, and simmer for 2-3 minutes or until slightly reduced. Add the cooked pasta and reserved pasta water, and stir to combine.
  • 3.
Preheat oven grill to high. Sprinkle pasta bake with mozzarella and place on a baking tray. Grill for 10-12 minutes or until golden brown and bubbling. Stand for 5 minutes. Serve sprinkled with extra chilli flakes.
