Cherry, orange and strawberry compote
This easy compote has a wonderfully intense berry and orange flavour. It’s perfect for the coeur a la creme, however for a simpler gathering, I quite often just serve it with a little Greek-style yoghurt.
Ingredients (5)
- 1/2 cup (110g) caster sugar
- Finely grated zest of 2 oranges, plus 2/3 cup (165ml) orange juice
- 350g cherries, pitted, halved
- 100g mixed berries (such as raspberries, blueberries and blackberries)
- 250g punnet strawberries, hulled, halved, quartered if large

1.Place sugar, orange zest and juice in a saucepan over medium heat, stirring to dissolve sugar. Bring to the boil, then add one-third of the cherries and one-third of the mixed berries. Reduce heat to low and simmer for 4 minutes or until slightly reduced. Strain through a fine sieve into a bowl. Set the cooked berries aside, then return juice to the pan over medium-high heat. Simmer for 3-4 minutes until syrupy (watch it carefully as the sugar may burn). Set aside to cool slightly.

2.Gently stir cooked berries, strawberries and remaining cherries and mixed berries into the syrup. Serve immediately, or transfer to an airtight container and keep chilled for up to 3 days.
