Chewy spiced pistachio slice

This sweet and gently spiced pistachio slice from Michael Rantissi is a remarkably easy crowd-pleasing favourite.
Ingredients (12)
- 1 cup (150g) plain flour, sifted
- 70g caster sugar
- 120g cold unsalted butter, cut into cubes
Topping
- 4 eggs, lightly beaten
- 280g dark brown sugar
- 1 tsp vanilla extract
- 1/3 cup (50g) plain flour, sifted
- 1 tsp ground cinnamon
- 1/4 tsp ground nutmeg
- 2 tsp baking powder
- 2 2/3 cups (400g) pistachios, coarsely chopped
- Icing sugar, to dust

1.Preheat oven to 180°C. Line the base and sides of a 22cm square baking pan with baking paper.

2.To make the base, place the flour, sugar and butter in a food processor and pulse until the mixture resembles breadcrumbs. Spread the mixture evenly over the base of the prepared pan and press into the pan using the back of a spoon. Bake for 20 minutes or until golden brown.

3.For the topping, place eggs, sugar, vanilla, flour, cinnamon, nutmeg, baking powder, pistachios and 1/2 tsp salt in a large bowl and combine using your hands. Spread mixture evenly over the cooked base and bake for 25-30 minutes until the topping is just firm in the centre.

4.Cool completely in the pan on a wire rack, then cut into bars. Dust with icing sugar to serve.
