Chicken pitas with carrot, coriander and chilli mayonnaise
These tasty pita pockets are ideal to take for lunch at work or on a picnic outdoors.

Ingredients (8)

  • 1/4 cup (75g) low-fat mayonnaise
  • 2 tablespoons lime juice
  • 2 long red chillies, thinly sliced (remove seeds for less heat)
  • 4 pita bread pockets, halved
  • 1/2 firmly packed cup coriander sprigs
  • 1/2 barbecued chicken, skin and bones discarded, meat shredded
  • 1 carrot, coarsely grated
  • 50g snow pea sprouts

Don't forget you can add these ingredients to your Woolworths shopping list.

Method

  • 1.
    Combine the mayonnaise, lime juice and sliced chilli in a small bowl.
  • 2.
    Spread the inside of each pita with some of the chilli mayonnaise, then arrange the coriander, chicken, carrot and snow pea sprouts inside. Drizzle with the remaining chilli mayonnaise and serve immediately.
