Chicken schnitty bun with cabbage and apple slaw
Take your schnitty game to the next level.
Ingredients (17)
- 500g skinless chicken breast fillets
- 1 cup (150g) plain flour
- 2 eggs, lightly beaten
- 2 cups (100g) panko breadcrumbs
- 20g finely grated parmesan
- Finely grated zest of 2 limes
- 50g unsalted butter, chopped
- 2 tbs sunflower oil
- 6 brioche buns
Cabbage and apple slaw
- 1/2 small white cabbage, thinly shredded (we used a mandoline)
- 1 red onion, thinly sliced
- 1 red Envy™ apple, cut into matchsticks
- 1/3 cup (100g) mayonnaise
- 1 pinch smoked paprika (pimenton)
- Finely grated zest and juice of 1 lime
- 1/2 bunch each mint and coriander, leaves picked, finely chopped
- 1 pinch dried chilli flakes

1.Halve chicken breasts lengthways to a thickness of 3cm. Working with 1 piece at a time, sandwich between 2 sheets of baking paper and gently hammer with a mallet or rolling pin to 5mm thick.

2.Place flour, eggs and breadcrumbs in 3 separate bowls. Stir parmesan and lime zest through breadcrumbs. Dust chicken breasts in flour and shake off excess. Dip in egg, then breadcrumb mixture. Place on a tray and chill for 20 minutes.

3.Heat butter and oil in a frypan over medium-high heat. In batches, add chicken and cook for 3-4 minutes each side or until golden and cooked through.

4.Meanwhile, for the cabbage and apple slaw, combine all ingredients in a bowl with 1 tsp salt flakes and a pinch of ground black pepper

5.Slice buns vertically through centre, three-quarters of the way through, and fill with slaw. Slice schnitzel and add to buns. Serve with any remaining slaw.
