Method

  • 1.
Halve chicken breasts lengthways to a thickness of 3cm. Working with 1 piece at a time, sandwich between 2 sheets of baking paper and gently hammer with a mallet or rolling pin to 5mm thick.
  • 2.
Place flour, eggs and breadcrumbs in 3 separate bowls. Stir parmesan and lime zest through breadcrumbs. Dust chicken breasts in flour and shake off excess. Dip in egg, then breadcrumb mixture. Place on a tray and chill for 20 minutes.
  • 3.
Heat butter and oil in a frypan over medium-high heat. In batches, add chicken and cook for 3-4 minutes each side or until golden and cooked through.
  • 4.
Meanwhile, for the cabbage and apple slaw, combine all ingredients in a bowl with 1 tsp salt flakes and a pinch of ground black pepper
  • 5.
Slice buns vertically through centre, three-quarters of the way through, and fill with slaw. Slice schnitzel and add to buns. Serve with any remaining slaw.
