Chicken tikka burgers with tomato kasundi
Spice up your chicken burgers with curry paste and a big dollop of tomato kasundi.
Ingredients (8)
- 2 chicken breast fillets
- 1/2 cup (140g) thick Greek-style yoghurt, plus extra to serve
- 2 tbs tikka masala curry paste
- Olive oil, to brush
- Turkish bread or 4 soft burger buns, split 4 butter lettuce leaves
- Tomato kasundi, to serve
- 1/2 cup coriander leaves
- 1/2 small red onion, thinly sliced

1.Preheat a chargrill or barbecue on medium-high.

2.Slice each chicken fillet in half horizontally to make 4 portions. Combine yoghurt with tikka paste and brush over the chicken. Season.

3.Brush the chargrill with a little oil, then cook chicken for 2 minutes each side or until cooked through. Loosely cover with foil and set aside to rest.

4.Meanwhile, lightly toast bread, then divide lettuce among 4 bread slices and top with a piece of chicken. Drizzle with tomato kasundi and extra yoghurt, then top with coriander and onion. Sandwich with remaining bread tops and serve.
