Ingredients (13)

  • 400g fresh yang chun wheat noodles
  • 250g cooked chicken, finely shredded
  • 2 Lebanese cucumbers, julienned
  • 2 carrots, peeled, julienned
  • 1 cup mixed herb leaves (we used coriander and mint)
  • 4 long green shallots, finely shredded
  • Toasted sesame seeds, to serve

Sesame dressing

  • 1/4 cup (70g) Chinese sesame paste (from Asian food shops)
  • 1 1/2 tbs light soy sauce
  • 1 1/4 tbs Chinese black (chinkiang) vinegar
  • 3 tsp caster sugar
  • 1 1/2 tsp chilli oil
  • 1 garlic clove, crushed

Method

  • 1.
    For the sesame dressing, whisk all ingredients together in a large bowl, adding 1-2 tbs water to loosen the mixture.
  • 2.
    Cook noodles in a large saucepan of boiling water according to packet instructions. Drain and cool under cold running water. Drain well, then add to dressing with the chicken, cucumber, carrot, herbs and half the shallot. Toss to combine. Top salad with remaining shallot.
  • 3.
    Sprinkle with sesame seeds to serve.
