Chinese duck and vegetable crepes
Here’s a twist on the traditional Peking duck - a quick trip to a Chinatown near you for some roast duck and frozen pancakes and you’re just about there.

Ingredients (10)

  • 1 teaspoon vegetable or peanut oil
  • 1/2 roast duck, meat and skin removed from bones and sliced thinly
  • 2 cups bran sprouts
  • 2 spring onions, from white to dark green, finely sliced
  • 4 fresh shiitake mushrooms, finely sliced
  • 1/2 clove garlic, minced or grated
  • 1x2 cm piece of ginger, peeled and grated
  • 1 teaspoon oyster sauce
  • 1 teaspoon hoisin sauce
  • 1 packet Peking duck style pancakes (from Asian groceries)

Don't forget you can add these ingredients to your Woolworths shopping list.

Method

  • 1.
    Heat a wok or large frying pan to very hot and add the oil, then the ginger, garlic, spring onions and sliced mushrooms and cook for one minute, stirring constantly.
  • 2.
    Add the bean sprouts and cook for one minute stirring occasionally.
  • 3.
    Fold through the duck and the two sauces and cook for one minute more.
  • 4.
    Transfer the mixture to a bowl and serve with the warm pancakes (best gently steamed).
  • 5.
    Guests should place a tablespoon of the mixture into a pancake and roll like Peking duck.
