Ingredients (11)

  • 2 tsp sesame oil
  • 1/4 cup (60ml) peanut oil
  • 1 red onion, finely chopped
  • 4 rashers bacon, rind removed, sliced into lardons
  • 5cm piece (25g) ginger, cut into matchsticks
  • 2 garlic cloves, thinly sliced
  • 6 uncooked prawns, peeled, deveined, chopped
  • 4 cups (580g) cooked jasmine rice or other long-grain rice
  • 1/4 cup (60ml) oyster sauce
  • 2 eggs, lightly whisked
  • 1 cup (120g) frozen peas

Method

    Heat oils in a wok or large frying pan over medium-high heat. Add onion, bacon, ginger and garlic and cook, stirring, for 3-4 minutes until onion has softened and fat has rendered from bacon. Add prawn and toss to lightly sear, then add rice and oyster sauce. Stir-fry, tossing, for 3-4 minutes until well combined and lightly caramelised. Add egg and peas and toss to break up the egg. Stir-fry for 2 minutes or until the egg is cooked through. Serve immediately.
