Chocolate layer cake
This irresistible chocolate cake is layered with a luscious whipped chocolate filling to further tantalise your guests.
Ingredients (18)
- 200g good-quality dark chocolate, roughly chopped
- 250g unsalted butter, softened
- 1 1/2 cups (330g) caster sugar
- 1 teaspoon vanilla extract
- 4 eggs
- 2 cups (300g) plain flour
- 1 teaspoon baking powder
- 1/2 cup (50g) almond meal
- 1/2 teaspoon bicarbonate of soda
- 1/3 cup (35g) cocoa powder, sifted
Whipped chocolate filling
- 300g good-quality dark chocolate, roughly chopped
- 100g unsalted butter
- 1 cup (250ml) thickened cream
Chocolate glaze
- 1/2 cup (125ml) thin cream
- 150g good quality dark chocolate, roughly chopped
- 1 tablespoon golden syrup
- 1 tablespoon caster sugar
- 45g unsalted butter
Method

1.Preheat the oven to 160°C. Grease and line the base and sides of a 23cm springform cake pan.

2.Place chocolate and 60g butter in a heatproof bowl set over a pan of gently simmering water (don't let the bowl touch the water). Stir occasionally until melted, then set aside to cool.

3.Place the sugar and remaining 190g butter in an electric mixer and beat until thick and pale, then beat in the vanilla extract. Add the eggs, 1 at a time, beating well after each addition, until just combined. Beat in the cooled chocolate mixture.

4.In a separate bowl, sift together the flour, baking powder and bicarbonate of soda, then add the almond meal. In a third bowl, combine the cocoa powder and 2/3 cup (165ml) boiling water. Gradually fold the dry ingredients into the chocolate mixture, alternating with the cocoa mixture, until all the ingredients are combined.

5.Pour mixture into prepared pan and bake in the oven for 1 hour or until a skewer inserted into the centre comes out clean. Remove from the oven, allow to cool slightly, then remove the collar of the pan and cool completely.

6.Meanwhile, for the whipped chocolate filling, combine all ingredients in a small saucepan and place over low heat, stirring occasionally, until melted and combined.

7.Allow to cool for 5 minutes before placing in the fridge to chill completely. Once chilled and thickened, use electric hand beaters to beat until thick and creamy.

8.For the chocolate glaze topping, place all ingredients in a saucepan over low heat, stirring occasionally, until the chocolate has melted and the ingredients are well combined, smooth and glossy.

9.If you wish to fill the cake, carefully cut it into 3 layers horizontally. Place the bottom layer on a serving plate, then use a spatula to spread with half the whipped chocolate filling. Place the middle layer on top, and spread with remaining filling. Place the top slice onto the cake and carefully pour over the glaze, letting it drip down the sides. Allow half an hour for the glaze to set before cutting.
