Cherry coconut and chocolate crumble

A twist on a classic crumble, this version captures the essence of Cherry Ripe with a blend of rich chocolate, juicy cherries, and coconut, creating a dessert that's both indulgent and comforting.

You’ll need a 1.5 L capacity round baking dish 

Ingredients (11)

  • 500g frozen or fresh pitted cherries
  • 1 tbs caster sugar
  • 1 1/2 tbs cornflour
  • 1 tsp vanilla bean paste
  • Coconut yoghurt, to serve

Crumble

  • 2/3 cup (100g) plain flour
  • 1 cup (90g) rolled oats
  • 1 cup (70g) shredded coconut
  • 100g brown sugar
  • 100g unsalted butter, chilled, chopped
  • 100g dark (40%) chocolate, roughly chopped

Method

  • 1.
    Preheat oven to 200°C/180°C fan-forced. In a medium bowl, toss the cherries with the sugar, cornflour and vanilla until well coated. Transfer to a round 1.5L baking dish.

    For the crumble, in a medium bowl, combine the flour, oats, coconut, sugar and a pinch of salt flakes. Add the butter and using your fingertips, rub together until a sandy texture. Stir through chocolate, making sure not to overmix.
  • 3.
    Scatter crumble topping evenly over the fruit and bake for 30-35 minutes until golden and bubbling around the edges. Serve warm with a generous spoon of coconut yoghurt.
