‘Cherry Ripe’ crumble

A twist on a classic crumble, this version captures the essence of Cherry Ripe with a blend of rich chocolate, juicy cherries and coconut, creating a dessert that’s both indulgent and comforting.
You’ll need a 1.5L-capacity round baking dish for this recipe.
Ingredients (11)
- 500g frozen or fresh pitted cherries
- 1 tbs caster sugar
- 1 1/2 tbs cornflour
- 1 tsp vanilla bean paste
- Coconut yoghurt, to serve
Crumble
- 2/3 cup (100g) plain flour
- 1 cup (90g) rolled oats
- 1 cup (70g) shredded coconut
- 100g brown sugar
- 100g unsalted butter, chilled, chopped
- 100g dark (40%) chocolate, roughly chopped
Method

1.Preheat oven to 200°C/180°C fan-forced. In a medium bowl, toss the cherries with the sugar, cornflour and vanilla until well coated. Transfer to a round 1.5L-capacity baking dish.

2.For the crumble, in a medium bowl, combine the flour, oats, coconut, sugar and a pinch of salt flakes. Add the butter and, using your fingertips, rub together until a sandy texture. Stir through chocolate, making sure not to overmix.

3.Scatter crumble topping evenly over the fruit and bake for 30-35 minutes, until golden and bubbling around the edges.

4.Serve warm with a generous spoon of coconut yoghurt.
