Chestnuts roasting on an open... okay, you've heard it before, so instead, try Maggie Beer's indulgent Christmas log.
Ingredients (7)
- 200g unsalted butter
- 2 tablespoons caster sugar
- 1 large egg
- 1 tablespoon Cognac or good-quality brandy
- 450g cooked, peeled, pureed, sieved chestnuts or canned, unsweetened chestnut puree
- 200g dark chocolate, melted
- Cocoa powder, to dust

1.Cream butter, sugar, egg and Cognac (or brandy) until pale.

2.Add chestnut puree and mix thoroughly. Put half the mixture into a separate bowl and thoroughly mix in the chocolate. Set aside to cool.

3.Spread chocolate mixture into a rectangle shape (about 24 x 12 cm) on a sheet of baking paper or foil, then top with chestnut mixture.

4.Roll into a log shape and refrigerate for at least 1 hour or until set.

5.Unwrap, place on a platter, dust with cocoa and slice with a sharp knife dipped in hot water.
