Chestnuts roasting on an open... okay, you've heard it before, so instead, try Maggie Beer's indulgent Christmas log.

Ingredients (7)

  • 200g unsalted butter
  • 2 tablespoons caster sugar
  • 1 large egg
  • 1 tablespoon Cognac or good-quality brandy
  • 450g cooked, peeled, pureed, sieved chestnuts or canned, unsweetened chestnut puree
  • 200g dark chocolate, melted
  • Cocoa powder, to dust

Method

  • 1.
    Cream butter, sugar, egg and Cognac (or brandy) until pale.
  • 2.
    Add chestnut puree and mix thoroughly. Put half the mixture into a separate bowl and thoroughly mix in the chocolate. Set aside to cool.
  • 3.
    Spread chocolate mixture into a rectangle shape (about 24 x 12 cm) on a sheet of baking paper or foil, then top with chestnut mixture.
  • 4.
    Roll into a log shape and refrigerate for at least 1 hour or until set.
  • 5.
    Unwrap, place on a platter, dust with cocoa and slice with a sharp knife dipped in hot water.
