Silky smooth chocolate ganache is the icing on the cake. Or mousse. Or tart. In fact, there's not many desserts that can't be improved with a swipe of this super rich ganache.

Ingredients (4)

  • 225g good-quality dark chocolate, chopped
  • 90g unsalted butter
  • 300ml thickened cream
  • 1 1/2 tbs liquid glucose*

Method

  • 1.
    Place chocolate and butter in a bowl set over a pan of simmering water (don’t let the bowl touch the water), stirring until smooth. Remove from heat and set aside.
  • 2.
    Place cream and glucose in a pan, bring to just below boiling point, then stir into chocolate mixture until smooth. Cool, then chill for 30 minutes or until thick.
