Chocolate loukoumades

A rich coffee syrup take these loukoumades to heavenly new heights. You will need a deep-frying thermometer for this recipe.
Ingredients (10)
- 265g plain flour, sifted
- 1/4 cup (25g) Dutch cocoa powder, sifted
- 2 tbs caster sugar, plus 1 tsp extra
- 1/2 tsp bicarb soda
- 1/2 tsp baking powder
- 7g dried yeast
- Vegetable oil, to deep fry
- Runny honey, to serve
Coffee sugar
- 1 tbs instant coffee granules, crushed
- 1/4 cup (55g) caster sugar
Method

1.Combine flour, cocoa, sugar, bicarb, baking powder and 1 tsp salt flakes in a large bowl.

2.Place yeast, extra 1 tsp sugar and 1 1/2 cups (375ml) lukewarm water in a separate bowl. Whisk to combine, then set aside for 5 minutes or until frothy.

3.Pour yeast mixture into the dry ingredients and whisk until smooth. Transfer dough to a large oiled bowl and cover with a damp tea towel. Stand for 1 hour or until dough has doubled in size.

4.For the coffee sugar, combine coffee and sugar in a small bowl and set aside.

5.Half-fill a large saucepan with oil. Heat to 180°C (a cube of bread will turn golden in 45 seconds when the oil is hot enough). In batches, carefully drop teaspoon-sized of dough balls into the oil. Fry for 2-3 minutes until crisp. Remove with a slotted spoon and transfer to a paper towel-lined tray.

6.Toss loukoumades in coffee sugar and drizzle with honey, to serve.
