Chorizo, charred asparagus, preserved lemon and spring greens

- 2 tbs extra virgin olive oil, plus extra to serve
- 1 bunch asparagus, trimmed
- 1 chorizo sausage, thinly sliced on an angle lengthways
- 150g sourdough loaf, crusts removed, torn
- 1/4 preserved lemon, flesh and pith removed, skin shredded
- 50g goat’s feta, thinly sliced
- 1/2 loosely packed cup each baby spinach, watercress and warrigal greens (optional)

1.Heat oil in a large frypan over high heat. Add asparagus and cook, stirring occasionally, for 3 minutes or until just tender, then transfer to a plate and cover to keep warm. Reduce heat to mediumhigh, add chorizo and cook for 1-2 minutes each side or until golden. Transfer to asparagus plate and cover. Add sourdough, lemon and 1/2 tsp salt flakes to pan and cook, stirring regularly, for 3 minutes or until sourdough is golden.

2.Divide asparagus mixture, sourdough mixture, feta, spinach, watercress and warrigal greens, if using, between serving plates and drizzle with extra oil to serve.
