Chorizo and chicken tortilla wrap
We love this combination of flavours - add a tortilla and you've got a meal.
Ingredients (11)
- 1 tsp smoked paprika
- 1 garlic clove, crushed
- Grated zest and juice of 1 lemon
- 1 cup chopped coriander
- 2 tbs olive oil
- 2 x 170g chicken breast fillets, cut into 2.5cm-wide strips
- 4 tortilla wraps
- 2 chorizo, thinly sliced
- 1 roasted red capsicum piece, cut into strips
- 1 cup mixed salad leaves
- 1 cup sour cream
Method

1.Mix paprika, garlic, zest and juice, half the coriander and 1 tbs oil in a bowl. Add chicken and marinate for 20 minutes.

2.Wrap tortillas in foil. Place in a 180°C oven for 5 minutes to warm through. Heat remaining oil in a frypan, add chorizo and cook for 2-3 minutes each side until crisp. Remove and set aside.

3.Cook the chicken for 5-6 minutes, stirring, until cooked through and golden. Toss with chorizo, capsicum and remaining coriander.

4.Divide chicken mixture among tortillas with salad leaves. Wrap and serve with sour cream.
