Chorizo, potato and cabbage soup
A warming, hearty and comforting soup that's easy enough to set and forget on those cold winter days. This recipe originally appeared in Cooking with Tenina: More great recipes for the Thermomix, by Tenina Holder.

Ingredients (12)

  • 2 chorizo sausages
  • 1 red onion, peeled, halved
  • 2 cloves of garlic, peeled
  • 1 red paprika, deseeded (or red capsicum)
  • 700g water
  • 2 tbsp chicken stock powder
  • 1 tbsp umami paste
  • 1 tbsp ground paprika
  • 500g potatoes, peeled, cubed into bite sized pieces
  • 1 small cabbage (enough for your family, don’t go overboard),
 cut into thin wedges
  • 1 x 400g tin of chickpeas,
or soaked and cooked equivalent
  • chopped coriander and/or parsley to garnish

Method

  • 1.
    Place chorizo, onion, garlic and paprika into the Thermomix bowl and chop 3 sec/speed 6. Saute 5 min/Varoma/speed 1.
  • 2.
    Add all remaining ingredients other than cabbage and chickpeas.
  • 3.
    Place cabbage into Varoma dish and set into position. Cook 15 min/Varoma/Reverse/speed 1. Set cabbage aside.
  • 4.
    Add chickpeas to the Thermomix bowl and cook 2 min/100°C/Reverse/speed 1
  • 5.
    Place wedges of cabbage into large soup bowls and ladle soup over. Sprinkle with chopped coriander, parsley or both.
