Chorizo, quince paste and manchego salad

This Spanish cafe salad is put together in a loose, casual, manana style – sizzled chorizo mingles with radicchio, olives, almonds, manchego cheese and sweet preserved quince paste.
Ingredients (9)
- 2 mild or hot chorizo sausages
- 1 teaspoon extra virgin olive oil
- 2 heads radicchio, trimmed
- 100-150g quince paste, cut into small cubes
- 100-150g manchego cheese, shaved
- 12 Spanish green olives
- 2 tablespoons Spanish almonds, toasted
Dressing
- 1 tablespoon sherry vinegar
- 2 tablespoons extra virgin olive oil

1.Thinly slice the chorizo on an extreme diagonal. Heat the olive oil in a frypan over medium-high heat and sizzle the chorizo until scorched and curling. Reserve juices for dressing and set chorizo aside.

2.For the dressing, whisk the sherry vinegar and olive oil in a bowl, season with sea salt and pepper, then add a spoonful of the chorizo juices.

3.Separate the radicchio leaves, then tear each one roughly into 2 or 3 pieces. Toss the leaves in the dressing and divide among 4 serving plates. Scatter over the chorizo slices, cubes of quince paste, manchego, olives and almonds, then drizzle with any remaining dressing.
