Lamb rack with harissa, beans and yoghurt mash
“Lamb conjures up all sorts of memories in our house, from my husband’s family farm in New Zealand where they toss shanks to the dogs, to my grandmother’s house that smelled of roasting lamb, woody chardonnay and Elizabeth Arden’s Red Door, no matter the time of day.” This is an edited extract from Every Night of the Week by Lucy Tweed. Chicken club salad
“I like to cook this with bone-in cutlets and then, once the chook is done and rested, I cut the bone out and slice the meat. If you find this a little daunting, ask the butcher to debone the cutlets for you first, or use thigh fillets. Thighs are forgiving (not mine, mind you); you’ll just need to reduce the cooking time as explained below.” This is an edited extract from Every Night of the Week by Lucy Tweed. Fridge giver san choy bau
“You can add bamboo shoots, water chestnuts, peanuts. You pretty much can’t go wrong at all. You’re just looking for about 5-7 cups of chopped veg in total.” This is an edited extract from Every Night of the Week by Lucy Tweed. Photography by Lucy Tweed. (Murdoch Books, $35).
Tartare fish pie
“To clarify, it’s loosely a pie. It’s kind of a salad, potatoes and fish dinner put together with all the condiments and baked," says Lucy Tweed. This is an edited extract from Every Night of the Week by Lucy Tweed. Photography by Lucy Tweed. (Murdoch Books, $35).
