Cos lettuce with creamy herb dressing
Ingredients (9)
- 1 large head cos lettuce, outer leaves discarded, leaves separated
- Juice of 1/2 lemon
- 1 tsp extra virgin olive oil
- Chervil, tarragon and chives, to serve
Creme fraiche and herb dressing
- 1 small eschalot, very finely chopped
- 1 tbs red wine vinegar
- 2 tbs creme fraiche
- 160ml mild extra virgin olive oil
- 1 tbs each chopped chervil, tarragon leaves and chives

1.For the dressing, place the eschalot in a bowl along with a pinch of salt flakes and vinegar. Stand for 1 hour to macerate. Whisk in the creme fraiche and oil, then stir in the chopped herbs at the last minute.

2.Place washed and dried lettuce leaves in a bowl and season with salt flakes and freshly ground black pepper. Squeeze over lemon juice and and gently toss through oil. Arrange the leaves on a serving plate and drizzle over the dressing. Scatter with chervil, tarragon and chives to serve.
