Cos salad with buttermilk dressing and jalapeno crumb
Ingredients (12)
- 1 green jalapeno, finely chopped, or 1 tbs chopped pickled jalapeno, patted dry with paper towel
- 200g sourdough bread, crusts removed, torn
- 2 tbs extra virgin olive oil
- 1/4 cup (20g) finely grated pecorino
- 4 baby cos lettuces, halved lengthways
- Finely chopped chives, to serve
Buttermilk dressing
- 250g sour cream
- 250ml buttermilk
- 1/2 cup (40g) finely grated pecorino
- 3 tsp apple cider vinegar
- 1/2 tsp caster sugar
- 1/2 tsp garlic powder

1.Preheat the oven to 140°C. Grease a large baking tray and line with baking paper.

2.Combine jalapeno and bread on the prepared tray. Bake for 40 minutes or until bread is crisp. Drizzle with oil and sprinkle with pecorino, then toss to coat. Set aside.

3.Meanwhile, for the buttermilk dressing, whisk all ingredients in a small bowl until smooth.

4.Arrange lettuce halves on a serving platter. Drizzle with buttermilk dressing and scatter with jalapeno crumb and chive to serve.
