Ingredients (9)

  • 400g spaghettini
  • 80g butter
  • 1/3 cup (80ml) extra virgin olive oil
  • 2 garlic cloves, crushed
  • 2 long red chillies (or to taste), seeded and finely chopped
  • 500g spanner crab meat
  • 1/3 cup (80ml) white wine
  • ¾ cup flat-leaf parsley leaves, finely chopped
  • Juice of ½ & grated zest of 1 lemon

Method

  • 1.
    Cook pasta in a large saucepan of boiling salted water according to packet instructions, then drain reserving ½ cup (125ml) cooking water.
  • 2.
    Place a large frying pan over medium heat and add butter and oil. When butter starts to foam, add garlic and chilli and cook for 3 minutes or until softened and fragrant. Add crab, stir to coat and cook for 1 minute, stirring regularly. Increase heat to high, add wine and boil for 3 minutes or until reduced by half. Add parsley, pasta, reserved cooking water and lemon juice and zest, season and toss to combine. Divide among bowls and serve immediately.
