Ultimate creamy dressing with roasted garlic

Ingredients (6)
- 1 bulb garlic
- 1 tbs extra virgin olive oil
- 1/3 cup (80ml) buttermilk
- 1/4 cup (75g) whole egg mayonnaise
- 1/4 cup (20g) finely grated parmesan
- 1 tbs white wine vinegar

1.Preheat oven to 200°C/180°C fan-forced. Cut upper top off garlic bulb, then place on a sheet of aluminium foil. Drizzle with oil and wrap garlic in foil to enclose. Place on a tray and roast for 45 minutes or until softened. Set aside to cool.

2.Squeeze out garlic flesh then place into a medium bowl with any garlic oil from foil package. Smash with a fork until a paste, then add remaining ingredients and whisk until well combined. Season with salt flakes and freshly ground black pepper. Serve or store (see note).

This dressing will keep for up to 1 week in the fridge.
