Battering and frying sage leaves is absolutely delicious - you can't make too many of these!
Ingredients (4)
- 2/3 cup (100g) self-raising flour
- 150ml lager
- Olive oil, to shallow-fry
- 24 large sage leaves (from 2 bunches)
Method
-
1.Whisk flour, lager and some freshly ground pepper together in a large bowl. Heat 3cm oil in a deep frypan over medium heat (a cube of bread will turn golden in 15 seconds when the oil is hot enough).
-
2.In batches, coat the sage leaves in the batter, shaking off any excess, then fry for 1 minute each side or until golden and crisp. Drain well on paper towel, then season with salt and serve immediately.
