Crisp battered sage leaves

Battering and frying sage leaves is absolutely delicious - you can't make too many of these!

Ingredients (4)

  • 2/3 cup (100g) self-raising flour
  • 150ml lager
  • Olive oil, to shallow-fry
  • 24 large sage leaves (from 2 bunches)

Method

  • 1.
    Whisk flour, lager and some freshly ground pepper together in a large bowl. Heat 3cm oil in a deep frypan over medium heat (a cube of bread will turn golden in 15 seconds when the oil is hot enough).
  • 2.
    In batches, coat the sage leaves in the batter, shaking off any excess, then fry for 1 minute each side or until golden and crisp. Drain well on paper towel, then season with salt and serve immediately.
