Crostini with smoked mozzarella

Confit tomato and ricotta crostini
Smoked mozzarella - and its close cousin, scamorza - is a stretched curd cheese that melts into a bubbly, gorgeous, smoky, cheesy thing.
Ingredients (7)
- 8 small, thick slices woodfired bread
- 12 sundried tomatoes in oil, thinly sliced
- 1/4 cup (60ml) extra virgin olive oil
- Pinch of dried red chilli flakes or chilli powder
- 1 tablespoon chopped fresh oregano, plus whole leaves to garnish
- 1 (about 500g) large smoked mozzarella* (scamorza), cut lengthways into 8 slices
- 2 tablespoons flour, (seasoned with salt and pepper)

1.Preheat the oven to 180°C.

2.Place the bread slices on a large baking tray and bake in the oven for 5-10 minutes until golden.

3.Combine the sundried tomatoes with 2 tablespoons olive oil, chilli flakes or powder, and oregano, then season with salt and pepper. Brush one side of the crostini with some of the flavoured oil.

4.Heat remaining olive oil in a frypan over high heat. Dip each cheese slice in flour, then add to pan and fry for a few seconds on each side until golden.

5.Place bread on serving plates and top with slices of mozzarella. Place the sundried tomatoes on top and drizzle with their oil. Garnish with the extra oregano leaves and serve while the cheese is still soft and warm.
