These super-easy, crispy fish bites come filled with flaky fish, fluffy potato and a burst of flavour from mustard, shallot and onion. Serve with mayo for generous dipping.

Ingredients (11)

  • 500g fish fillets (salmon or ling)
  • 1 cup mashed potato, chilled
  • 4 long green shallots chopped
  • 2 tbs chopped flat leaf parsley
  • 1 tbs hot English mustard
  • 1 egg yolk
  • ⅓ cup plain flour
  • 1 egg, whisked
  • 1 cup panko breadcrumbs
  • Vegetable oil, to fry
  • Whole egg mayonnaise and extra parsley, to serve

Method

  • 1.
    Process fish in a food processor until a paste forms. Transfer to a bowl and combine with potato, onion, parsley, mustard and egg yolk. Season to taste.

    Shape 1 tbs measures of fish mixture into balls. Coat each fish ball in flour, egg and breadcrumbs. Place on a plate.
  • 3.
    Heat oil in a saucepan over medium high heat. Gently drop balls into oil, in batches, and cook for 1-2 minutes or until golden. Serve with mayonnaise and garnish with parsley.
