Date, maple and oat slice

This easy date, maple and oat slice recipe is the perfect quick bake, ideal for weeknights or a relaxed afternoon tea. The crumbly oat base creates a delicious platform for the rich and sticky date centre, with the maple syrup adding a delicate touch of sweetness to top it off. Simple, fast and perfect for all ages, this simple slice recipe is one to keep on hand.

Recipe note: You’ll need a 20cm square cake pan.

Ingredients (9)

  • 500g dried pitted dates, chopped
  • 1/4 cup (60ml) maple syrup
  • Finely grated zest of 1 orange
  • 1 tsp bicarb soda
  • 200g salted butter, softened
  • 110g icing sugar, sifted
  • 2 tsp vanilla bean paste
  • 300g plain flour
  • 150g rolled oats

Method

  • 1.
    Preheat oven to 180°C/160°C fan-forced. Grease a 20cm square cake pan and line with baking paper.

    Place dates, maple syrup, zest, bicarb and 1 cup (250ml) water in a medium saucepan and bring to boil over medium-high heat. Boil, stirring constantly, for 5-6 minutes until dates are very soft and a dry paste. Set aside to cool.
  • 3.
    Meanwhile, place butter, sugar and vanilla in a stand mixer fitted with paddle attachment. Beat until pale and fluffy. Add flour and mix until combined. Add oats and mix to combine.
  • 4.
    Press two-thirds of the oat mixture into prepared pan. Bake for 15 minutes or until pale golden. Spoon over date mixture and level with a spatula. Crumble over remaining oat mixture, pressing lightly into date layer. Bake for 35 minutes or until light golden. Cool in pan before transferring to a board and cutting into squares.

Recipe Notes

Store any leftover slice in an airtight container in a cool place. The slice will keep for up to 5 days, but will soften slightly over time.
