Ingredients (9)
- 500g dried pitted dates, chopped
- 1/4 cup (60ml) maple syrup
- Finely grated zest of 1 orange
- 1 tsp bicarb soda
- 200g salted butter, softened
- 110g icing sugar, sifted
- 2 tsp vanilla bean paste
- 300g plain flour
- 150g rolled oats
Method
-
1.Preheat oven to 180°C/160°C fan-forced. Grease a 20cm square cake pan and line with baking paper.
-
2.Place dates, maple syrup, zest, bicarb and 1 cup (250ml) water in a medium saucepan and bring to boil over medium-high heat. Boil, stirring constantly, for 5-6 minutes until dates are very soft and a dry paste. Set aside to cool.
-
3.Meanwhile, place butter, sugar and vanilla in a stand mixer fitted with paddle attachment. Beat until pale and fluffy. Add flour and mix until combined. Add oats and mix to combine.
-
4.Press two-thirds of the oat mixture into prepared pan. Bake for 15 minutes or until pale golden. Spoon over date mixture and level with a spatula. Crumble over remaining oat mixture, pressing lightly into date layer. Bake for 35 minutes or until light golden. Cool in pan before transferring to a board and cutting into squares.
Recipe Notes
Store any leftover slice in an airtight container in a cool place. The slice will keep for up to 5 days, but will soften slightly over time.
