Here's a gourmet twist on a classic favourite to make lunch-time exciting again.

Ingredients (10)

  • 1/3 cup (80ml) extra virgin olive oil
  • 1 small onion, finely chopped
  • 1 tablespoon freshly chopped rosemary
  • 2 garlic cloves, crushed
  • 50g anchovies, chopped
  • 2 x 425g can 4-bean mix, drained
  • 425g can chopped tomatoes, drained
  • 1/4 cup chopped flat-leaf parsley leaves
  • 4 slices crusty bread, toasted
  • Grated parmesan, to serve

Method

  • 1.
    Heat half the oil in a frypan, add the onion and cook over medium heat for 1 minute, then add rosemary, garlic and anchovies and cook for a further 1 minute until well combined.
  • 2.
    Add the beans, stir well, then add diced tomatoes. Reduce heat to low and cook for 5 minutes, stirring to prevent catching, until warmed through and collapsing slightly. Stir in half the parsley.
  • 3.
    Place toasted bread on plates, pile on beans, then sprinkle with the parmesan and remaining parsley.
