Posh beans on toast
Ingredients (10)
- 1/3 cup (80ml) extra virgin olive oil
- 1 small onion, finely chopped
- 1 tablespoon freshly chopped rosemary
- 2 garlic cloves, crushed
- 50g anchovies, chopped
- 2 x 425g can 4-bean mix, drained
- 425g can chopped tomatoes, drained
- 1/4 cup chopped flat-leaf parsley leaves
- 4 slices crusty bread, toasted
- Grated parmesan, to serve
Method

1.Heat half the oil in a frypan, add the onion and cook over medium heat for 1 minute, then add rosemary, garlic and anchovies and cook for a further 1 minute until well combined.

2.Add the beans, stir well, then add diced tomatoes. Reduce heat to low and cook for 5 minutes, stirring to prevent catching, until warmed through and collapsing slightly. Stir in half the parsley.

3.Place toasted bread on plates, pile on beans, then sprinkle with the parmesan and remaining parsley.
