There’s no need for fancy ice creams when you can pimp your own with favourite ingredients (and alcohol, if you feel like it).
Ingredients (7)
- 1/2 cup (80g) chopped pitted dried dates
- 1 tbs your favourite liquor, plus 1/3 cup (80ml) extra
- 1L vanilla ice cream
- 1/2 cup (50g) walnuts, toasted, chopped
- 12 chai tea bags
- 1 cup (250ml) boiling water
- 3 cups (750ml) milk
Don't forget you can add these ingredients to your Woolworths shopping list.
CloseMethod
-
1.Place dates and 1 tbs liquor in a small bowl. Stir and stand for 10 minutes.
-
2.Meanwhile, place ice cream in a large bowl to soften slightly.
-
3.Add walnuts, dates and any remaining soaking liquid to the softened ice cream and quickly stir to combine. Return to ice cream container and freeze for 2-3 hours or until firm enough to scoop.
-
4.Open tea bags and empty into a heatproof bowl. Add boiling water and steep for 15 minutes. Strain into a jug, discarding leaves. Stir in extra liquor, then divide among heatproof serving glasses.
-
5.Heat milk, either using a frother or by microwaving on high in 30-second bursts until hot, then using a balloon whisk to froth. Pour over chai mixture. Add scoops of ice cream to serve.
Recipe Notes
Begin this recipe at least 3 hours ahead. You can use your favourite liquor here... rum, Cognac, whisky and Cointreau are all good choices.
