This gourmet dulce de leche ice cream is surprisingly simple to make and uses only four ingredients.

Ingredients (4)

  • 600ml milk
  • 2 cups (600g) dulce de leche (South American milk caramel)
  • 1 teaspoon vanilla extract
  • 300ml thickened cream, whipped

Method

  • 1.
    Ice cream will need to chill in fridge for at least 4 hours.
  • 2.
    Bring milk to a simmer in a pan over low heat. Whisk in dulce de leche. Remove from heat and cool.
  • 3.
    Fold dulce de leche mixture and vanilla through cream, then chill until cool.
  • 4.
    Churn in an ice cream machine according to manufacturer's instructions. (Alternatively, pour into a shallow container and freeze for 2 hours or until frozen at edges. Remove and beat with electric beaters. Return to container and refreeze. Repeat 2 or 3 times). Transfer to a container and freeze for 4 hours or until firm.
