Food writer Georgina Esdaile pairs dumplings with a rich spinach salad for an easy and tasty dinner.

Ingredients (10)

  • 1/3 cup (85g) tahini (we used Woolworths Macro hulled tahini)
  • 1 tbs rice wine vinegar
  • 1 tbs soy sauce
  • 400g frozen chicken and vegetable dumplings
  • Crispy chilli oil, to serve

Spinach salad

  • 2 bunches (600g total) English spinach, trimmed, washed
  • 2 tbs toasted sesame seeds
  • 1 tsp caster sugar
  • 1 tbs soy sauce
  • 1 tsp mirin

Method

  • 1.
    To make the sesame sauce, place the tahini, vinegar, and soy sauce in a bowl and mix to combine. Add 2 tbs hot water, and stir to loosen. Set aside.

    For the spinach salad, bring a large saucepan of water to the boil. Add the spinach and cook for 30 seconds, or until wilted. Drain and run under cold water. Squeeze excess water from spinach and roughly chop. Crush sesame to a paste using a mortar and pestle. Add sugar, soy sauce and mirin and mix to combine. Place chopped spinach in a bowl with the dressing and mix to combine.

    Meanwhile, quarter-fill a large saucepan with water and bring to the boil. Place the dumplings in a lined steamer. Place steamer over the boiling water, cover with the lid, and cook for 7-8 minutes until cooked through.
  • 4.
    Divide sesame sauce between two plates, top with salad and dumplings, and drizzle with the chilli oil to serve.
