Earthquake biscuits
Afternoon tea never looked better than when these turned up!
Ingredients (9)
- 200 dark chocolate
- 90g unsalted butter
- 115g caster sugar
- 3 eggs, beaten
- 1 tsp vanilla extract
- 200g plain flour
- 25g cocoa powder
- 1/2 tsp baking powder
- 175g pure icing sugar

1.Place chocolate and butter in a bowl over a saucepan of simmering water (don't let bowl touch water) until melted. Remove from heat and stir in sugar. Add eggs, beating well then stir in vanilla. Sift the flour, cocoa band baking powder into a large bowl. Add the chocolate mixture and stir well. Cover with plastic wrap and refrigerate for 1 hour.

2.Pre heat oven to 160 degree. Lightly grease a baking tray.

3.Place icing sugar in a bowl. Form heaped teaspoon of the dough into balls and roll into the icing sugar. Place on the tray and bake in the oven for 10-15 minutes or until the tops of biscuits crack. They will be soft when removed, but will harden on cooling.
