Avocado and papaya ceviche
This vegetarian ceviche recipe couldn't be easier to make. One step and you're done!
Ingredients (9)
- 1 red capsicum, seeds removed, thinly sliced
- 1 small red onion, shaved (we used a mandoline)
- 14 baby heirloom tomatoes, halved
- 1/4 cup (60ml) lime juice
- 3 avocados, cut into small wedges
- 1/2 ripe papaya, cut into small wedges
- 2 cups coriander leaves
- 1/4 cup (60ml) extra virgin olive oil
- 1 habañero chilli, thinly sliced
Don't forget you can add these ingredients to your Woolworths shopping list.

1.Combine capsicum, onion, tomato and lime juice in a large bowl. Gently fold in the avocado, papaya, coriander, olive oil, chilli and a pinch of salt flakes. Set aside for at least 15 minutes before serving.
