Indian-spiced summer tomato salad

Make the most of summer’s bountiful tomatoes with this refreshing salad. Perfect as a starter, or as a side for barbecued meat or fish. Make sure your tomatoes are at room temperature, and don’t be scared to generously salt them.
Ingredients (6)
- 7 ripe heirloom tomatoes, at room temperature, cut into wedges
- 1 tsp cumin seeds
- 1 1/2 tbs finely chopped coriander stems, plus extra sprigs, to serve
- 1 1/2 tbs lime juice
- 1/4 cup (60ml) extra virgin olive oil
- Thinly sliced long green chilli, to serve

1.Arrange tomato on a serving plate, sprinkle with salt flakes and set aside.

2.Toast cumin seeds in a small frypan over medium heat for 3-4 minutes, until fragrant. Transfer to a mortar and use a pestle to very roughly crush. Transfer to a bowl and add coriander stems, lime juice and oil. Season with freshly ground black pepper and stir to combine.

3.Drizzle tomatoes with dressing. Serve with extra coriander sprigs and sliced chilli.
