Indian tomato salad

Make the most of summer’s bountiful tomatoes with this refreshing salad. Perfect as a starter, or as a side for barbecued meat or fish. Make sure your tomatoes are at room temperature, and don’t be scared to generously salt them.

Ingredients (6)

  • 7 ripe heirloom tomatoes, at room temperature, cut into wedges
  • 1 tsp cumin seeds
  • 1 1/2 tbs finely chopped coriander stems, plus extra sprigs, to serve
  • 1 1/2 tbs lime juice
  • 1/4 cup (60ml) extra virgin olive oil
  • Thinly sliced long green chilli, to serve

Method

  • 1.
    Arrange tomato on a serving plate, sprinkle with salt flakes and set aside.
  • 2.
    Toast cumin seeds in a small frypan over medium heat for 3-4 minutes, until fragrant. Transfer to a mortar and use a pestle to very roughly crush. Transfer to a bowl and add coriander stems, lime juice and oil. Season with freshly ground black pepper and stir to combine.
  • 3.
    Drizzle tomatoes with dressing. Serve with extra coriander sprigs and sliced chilli.
